Dry red wine
The name Concordia was used by the Romans to designate the goddess of harmony in marriage. That’s why it was chosen for this elegant assemblage of Fetească Neagră and Cabernet Sauvignon, symbolizing those years when the two varieties reach maturity simultaneously. It is a wine that impresses through the firmness and fruitfulness structurally sustained by silky tannins.

Taste
The taste confirms the nose and is filled with notes of bitter cherries and raspberries but also black chocolate. The body is strong, powerful but round, with pleasing tannins.

Serving
Best serve at maximum to 18 ° C, it can be stored for up to 3 years, away from the sun, in a horizontal position at 13 ° C.

Filet Mignon, casseroles, turkey in gorgonzola sauce
The combination of red, black and refined fruit notes helps this assemblage to complement many dishes made with red meat, minced meat or cheeses with personality and strong taste, such as gorgonzola. It fits perfectly the dishes served in a wine sauce, such as mignon fillet, or complements oven-cooked dishes.

Wine-making and maturation
Matured in oak barrel for 11 months
In some years both varieties synchronize and reached phenolic maturation simultaneously. Harvesting was done manually in small 7 kg cartons, after which grapes were then carefully selected on vibrant tables. We performed a cold pre-maceration of the intact beans at 12 ° C for 5-8 days. The alcoholic fermentation (100% by selected yeast inoculation) controlled at 25-28 °C lasted 8-10 days, followed by a hot post-maceration. 50% of the wine was matured in new French oak barrels, while the other half was kept in barrels at the second pass, for 11 months.
