The grapes are picked by hand, being then carefully selected on the sorting tables. Cold maceration of grape berries lasts from 5 to 8 days, at a controlled temperature of 16 °C. Alcoholic fermentation (100% by adding selected yeasts) is controlled at 26-28 °C between 8-10 days, followed by hot maceration (thermo-maceration) between 5-8 days. The wine was aged in French oak barrels at the second use for 3 months.
