Enira Winery has just been named WINERY OF THE YEAR 2023 at the London Wine Competition. It benefits from ideal geo-climatic conditions for winemaking, being situated near the Rhodope Mountains and the Maritsa River, and having a special terroir with clay and limestone soils. This is where this full-bodied, flavorful wine originates, captivating from the very beginning with its color and then with its intense aromas.

It is a delicious wine with a medium body, excellent acidity, silky tannins, offering a smooth and mineral taste. The finish is fruity with medium length.
Aroma:
The intense aromas, typical of the variety, create superb sensations of stone cherries, black currants, baked spices, and cinnamon.
Food Pairing:
Aged beef steak, lamb ribs with herb and spice crust, dishes based on smoked meat, spicy cheeses.
Vinification:
The first sorting is done in the vineyard, and only ripe and high-quality grapes are hand-picked. A new selection is carried out on vibrating sorting tables, ensuring that only high-quality grapes are used for fermentation. Subsequently, the tanks are gravity-filled without crushing the grapes. Cold maceration of whole berries takes place for 3 to 5 days at 10-12 ºC to extract color and aromas. Alcoholic fermentation with the addition of selected yeast strains is controlled at 24-26 ºC over 8-10 days, to reach 3-4 g/L residual sugar. Warm maceration follows for 7-10 days. Malolactic fermentation continues in tanks, followed by maturation for approximately 12 months in French oak barrels.
