Offers an elegant flavor and velvety tannins. On the palate, it presents notes of black fruits and spices. The finish is long, followed by a complex and lingering aftertaste.
Aroma:
Presents strong and persistent aromas, beautifully balanced, in which the scents of overripe berries and dark chocolate stand out, with hints of coffee and vanilla.
Food Pairing:
Successfully accompanies aged and spicy cheeses, beef, lamb, pork tenderloin, game meat, as well as a multitude of red sauce-based dishes. To fully experience the wine's potential, it can also be paired with lamb pastrami with strong oriental spices.
Vinification:
The grapes were handpicked, and processing took place after careful sorting on the two modern sorting lines. Fermentation occurred in special stainless steel tanks designed for the fermentation and maceration of red wines, state-of-the-art tanks equipped with automatic liquid recirculation pumps, as well as in rotary tanks (ROTO type), where more intense maceration took place. The "cold maceration" method was applied for 5-8 days, followed by fermentation at a temperature of 24-25°C for 8-10 days. The wine was stored in barrels for 12-18 months.
