It has strong and persistent aromas, with prominent notes of blackberries, blackcurrants, overripe red cherries, and hints of coffee and oak wood.
Taste:
The taste notes are pronounced, thanks to the aging of each variety separately. They confirm the olfactory notes and are complemented by spicy undertones.
Food Pairing:
Smoked meat steaks, BBQ pork ribs, seasoned game meat, dried cold cuts.
Winemaking:
The grapes were handpicked, and fermentation took place in special stainless steel tanks for red wine fermentation and maceration, state-of-the-art tanks equipped with automatic liquid recirculation pumps, as well as in rotary tanks (ROTO type), where more intense maceration occurs. The "cold maceration" method was applied for 5-8 days, followed by fermentation at a temperature of 24-25°C for 8-10 days. The wine resulting from the two varieties was separately aged in French oak barrels for approximately 10 months.
