An intense and explosive Fetească Neagră, characteristic of the Aliman terroir. Different from any other Fetească Neagră you might try, this wine showcases what the Dobrogean sun and our skilled winemakers can achieve with this beloved native variety.
Visual:
Ruby red with brick-red reflections.
Olfactory:
On the nose, predominant notes of overripe cherries and cherries, vanilla, and discreet hints of spices.
Taste:
The taste is explosive, with notes of cherries, dried plums, cinnamon, and star anise. The finish is long and intense.
Culinary Pairings:
Traditional Romanian dishes, dishes made with duck, lamb, and even pork, slow-cooked with spices.
Winemaking:
The grapes were handpicked, and fermentation took place in special stainless steel tanks for red wine fermentation and maceration, state-of-the-art tanks equipped with automatic liquid recirculation pumps, as well as in rotary tanks (ROTO type), where more intense maceration occurs. The "cold maceration" method was applied for 5-8 days, after which fermentation took place at a temperature of 24-25°C for 8-10 days. Subsequently, the wine was aged in French oak barriques for 16 months.
