Vinification:
Grapes harvested at full maturity, 48 hours of maceration on the skins at low temperature, manual selection of grapes and berries after destemming. Maceration of the must in the press for 2 hours. Vinification at a controlled temperature between 14-16°C. Stirring on fine lees.
