Serving

Best enjoyed at 18 degrees, at least 30 minutes after opening. Can be stored for up to 10 years at a temperature of 13 degrees, away from light, in a horizontal position.

Beef in green pepper crust, Turkey, Cedar

A powerful Merlot created in the New World style with succulent flavors and tannins, ready to cope with robust and aromatic dishes. It fits perfectly a beef in crust of green pepper or next to stuffed turkey. Can also accompany a snack of matured cheeses with pronounced flavors, such as cedar or parmesan.

Wine-making and maturation

Matured 14 months in oak barrel

The grapes are picked manually, and then carefully selected on the sorting tables. The cold maceration of grapes takes between 3 and 5 days at a controlled temperature of 14 ° C. Alcoholic fermentation (100% by the addition of selected yeast) is controlled at 26-28 ° C between 6-8 days, followed by hot maceration (thermo-maceration) between 12 and 15 days. Aging was done for about 14 months in French oak barrels at second use for half the amount, while the other half was kept in oak barrels at the third use.
