Dry Red Vegan wine
This Merlot is special due to the fact that it is a vegan product. A young, easy-to-drink, elegant wine with notes of vanilla, blackberries, dried plums and red fruits (currants) that are also found in the taste. It has a remarkable freshness and round, soft tannins. The aftertaste is long, with minty and vegetal notes.

Red fruits, red bell peppers, jam of roses, red currants, green walnuts, red pepper. Full-bodied, velvety, with well-integrated alcohol and fresh acidity.

Serving
Best enjoyed at 17 degrees, at least 60 minutes after opening. Can be stored for up to 10 years at a temperature of 13 degrees, away from light, in a horizontal position.

Culinary associations
Mushroom Stroganoff, Pasta Bolognese
Although the intense fruit flavors recommend this wine next to red meat or even pork, we can replace meat with mushrooms to comply with the vegan requirements. It can be served alongside a mushroom Stroganoff in a delicious reinterpretation of a classic pairing or near pasta bolognese with mushrooms or soybeans instead of meat.

Wine-making and maturation
Vegan/Kosher Product
The first selection is made in the vineyards and only the best grapes which have reached full maturity are hand-picked, then carefully selected again on the sorting tables. The philosophy is that only quality grapes are fermented. The tanks are filled with the aid of gravity without crushing the fruits. Cold maceration takes place between 5 and 8 days at 12-14ºC. The alcoholic fermentation with selected Kosher / Vegan yeasts is controlled at 26-28 ° C for 8-10 days followed by maceration for 5 days in 20 m³ thermoregulated stainless steel tanks. Aged in oak for 4 months.
