Dry red wine, 13,5% ABV
A luxurious, manly, ample Cabernet Sauvignon with pronounced typicity. A ruby bright color impresses with fresh notes of black fruits, accompanied by berries, plums and spices. The tannic taste, with tones of wood and raspberry, matches perfectly red meat steaks.

Taste
The characteristics of Cabernet Sauvignon are very well represented in this wine: green bell peppers, well-ripened sour cherries and plums. The ripe tannins are long and intense, complex sustained by a high acidity. The aftertaste is dominated by green pepper mixed with black chocolate and espresso coffee.

Serving
Best enjoyed at maximum 18 ° C, it can be stored for up to 10 years, away from the sun, in a horizontal position at 13 ° C.

Roasted quail, pheasant or wild boar stew
The intense fruity aromas, tannins and acidity of this elegant wine perfectly accompanies meals made from game meat or from good quality beef or lamb. Spices and coffee notes can perfectly complement a steak or stew of wild fowl meat, and the long after-taste enhances and prolongs the experience.

Wine-making and maturation
Matured in oak barrel for 14 months
The grapes are hand-picked and then carefully selected on the sorting tables. The cold maceration of grapes takes between 3 and 5 days at a controlled temperature of 14 ° C. The alcoholic fermentation (100% by the addition of selected yeast) is controlled at 26-28 ° C between 6-8 days, followed by hot maceration (thermo maceration) between 15-20 days. 50% of the wine was matured in French oak barrels at second use, the remainder in French oak barrels at third use for 14 months.
