Nose:
The nose is pleasant and complex, with a predominance of various red fruits, berries, accompanied by light notes of spices and mint.
Taste:
On the palate, we encounter ripe red fruits, plum jam, subtle hints of sweet wood, bay leaves, and mint. An elegant and complex wine.
Food Pairing:
Successfully pairs with beef, lamb, and pork tenderloin.
Vinification:
The grapes were handpicked, and fermentation took place in special stainless steel tanks for the fermentation and maceration of red wines, state-of-the-art tanks equipped with automatic pumps for liquid recirculation, as well as in rotary tanks (ROTO type), where a more intense maceration occurred. The "cold maceration" method was applied for 5-8 days, followed by fermentation at a temperature of 24-25℃ for 8-10 days. Subsequently, the wine was matured in French oak barriques for 16 months.
